  • @Onyx good morning!  I am LOVING this advent calendar coffee experience!  My wife gifted the coffee calendar to me / us, and I am overjoyed that she did!!!  We are enjoying  the journey each day, savoring the coffees, the stories behind the coffees and everyone's reviews and brew techniques of the coffees!  A coffee geek's dream!!!  Thank you, Onyx, for creating this exciting journey, and thank you to the growers who made all this possible!  


  • @Christopher James You've convinced me to go coarser by a bit on this one. I tried 6.8 and 7.2 today, and neither overcame the tartness to my liking. There was a little sweetness in the brew, but I'll shoot for ~8.5 on this one for third brew, and I'll hope that it doesn't end up being hollow!

     

    Update:

    My first two cups using James Hoffman's Aeropress brew with 14g:255g and Third Wave water were very forward on acid with a quickly dissipating sweetness on the finish. Middle of the cup, there was an unpleasant bitterness and I've missed every flavor note from this point on.

    Cups 2 and 3 did not go well. Brewed one cup at 90'c and one at 99'c and both came out bitter finishing to sour as the cup cooled. I'm not sure where I went wrong with Day 4 or maybe it just wasn't for me to start with.

    Framily is still #1, for my money.


  • A very different coffee from the last, because it is far more fruity and juicy as opposed to the strong bright notes from the last one. I did like how it tasted cooled too. It also does have a bit of that chocolate at the end too.


  • One advantage to me doing these slowly is that I get to read up on everyone's experiences before I get to mine! The last few days I did a V60 for the first cup, then a French press to finish up the bag (on different days.. that would be far too much caffiene for me in one day!). So today continued again with the V60.

    Initial smells from the beans themselves seems more walnut type nutty to me than previous days (was getting a peanut butter smell from the last 2 days). The suggestion to let it cool a little is spot on. I am getting more flavors out of it as it cools. I really like the mouthfeel of this one, but also that it doesn't linger for a long time. Not very bright. Nice start to my Monday!
