Origin

Colombia

Colombia uniquely offers a diverse array of coffee varieties and processing methods. Known for innovation and resilience, Colombia's coffee history dates back to the early 19th century, with smallholder farmers being key contributors. Despite challenges like weather and conflict, Colombia consistently produces high-quality specialty coffee. For over a decade years, we've partnered with both large and small-scale producers from all five main growing zones, fostering close relationships and friendships.

Kenya

Kenya's coffee history is marked by innovation, quality, and a unique production system. Introduced by French missionaries in the late 19th century, coffee soon became vital to Kenya's economy. The country's high-altitude regions, volcanic soils, and ideal climate are perfect for Arabica beans. Known for meticulous processing and quality, Kenyan coffee is celebrated worldwide for its bright acidity, fruity flavors, and floral aromas. Despite challenges like climate change and price fluctuations, Kenya remains a leading producer of premium coffee. We've visited Kenyan auctions and its coffee regions for over a decade, witnessing continuous innovation and excellence in specialty coffee

Honduras

The coffee industry in Honduras has grown significantly, making the country a major player in the global market. Coffee cultivation began in the 19th century with smallholder farmers. Despite environmental challenges, Honduras has improved infrastructure, enhanced quality, and promoted sustainability, thriving from coffee exports. Known for its versatile and diverse regions, Honduran coffee is recognized internationally for its quality. Honduras is one of our main partnerships, where we invest in long-standing relationships across three regions. We are honored to work with numerous small farms in this noble country.

Elevation

1850 MASL

Elevation influences coffee cultivation, impacting flavor and quality. Higher elevations offer cooler temperatures, slowing the growth of coffee cherries, allowing more time for complex sugar and flavor development. This results in coffee with brighter acidity and a nuanced flavor profile. Additionally, cooler conditions at high altitudes reduce pests and diseases, making these coffees highly prized for their superior quality and distinct taste.

Variety

Harvest

Colombia

Colombia has a unique harvest schedule, thanks to the varied topography and proximity to the equator. Between those two variables, Colombia harvests nearly year round across the five main coffee growing regions. Each region has fairly reliable harvest times that conveniently stagger, providing fresh crop coffee all year round.

Kenya

The specialty harvest within East Africa takes place from early October through December and sometimes into January. As with all agriculture, the harvest times can vary due to factors like rainfall, average sunlight, and general temperature swings. We purchase from our relationships in East Africa once a year around January through February. The freshness season is extended well beyond most especially in Ethiopia. We source and land containers year round, thanks to the long voyage these coffees go on.

Honduras

The specialty harvest throughout Central America is concentrated mainly within the months from January through April. The shipping season begins shortly after first harvest and extends well into the months of June and July. The lower elevation regions tend to harvest first, and the high elevation regions harvest slower, with the cold nights lending to the slower maturation of coffee fruit. We tend to buy from our relationships in Central America once a year, with the freshness season running from May until early December.

Process

Drying

Roasting

Diedrich CR-35

Prior to production, each roast goes through a rigorous dial-in process, where we fine-tune our temperature curves. We roast to tight tolerances, with no more than 1° deviation from target temperatures, ensuring quality and consistency in each batch.

Agtron

#70.3 Moderate

Referring to medium as moderate is an intentional choice to highlight the roasting process, which is also referred to as development. Coffees within the moderate range exhibit notes in line with terroir, with a hint of sugar-browning. These characteristics are backed by a medium to high perceived acidity with a balanced tactile and sweetness, and they adapt easily from espresso to filter preparation.

Inventory

Evergreen

Our year-round rigorous sourcing allows us to have an evergreen blend with a flavor profile of high quality while retaining our commitment to seasonal coffees. This amount of cupping and blending takes a considerable amount of time, but we think it makes the difference and is a system we use for all our blends.

Extraction

Filter, Espresso

Our Education Team, guided by a commitment to quality, uses a blend of sensory skills and technology to brew the best coffee in our cafes and brew guides. We strive for vibrant and mouthwatering acidity, complex and approachable flavor, persistent and clear sweetness, and structured and pleasant mouthfeel, ensuring you're getting the best coffee experience.

BLEND APPROACH
Our approach to creating blends is a bit different at Onyx. Instead of choosing coffees from specific countries or regions that will, in theory, intertwine well to develop complex & cohesive flavors like most, we start from the end and work our way back. This perspective means...
