This deeply sweet microlot comes to us from our friends at Las Lajas. The proprietary "Yellow Diamond" honey process involves complex extended fermentation and drying curves, yielding complexity and tart acidity in the cup. We consider this lot to be experimental for its innovative anaerobic processing, bringing forward a deep sweetness and vibrant acidity, reminiscent of berries and dark chocolate.

Producer Spotlight
Keramo is a high-elevation processing station located in the Bensa woreda of Sidama, Ethiopia, in the village from which it takes its name. Situated between 2,260 and 2,360 meters above sea level, it is among the highest altitude sites in the region. The surrounding environment is marked by dense vegetation and a dry, sunny climate, ideal for slow cherry development and extended drying. The station works with approximately 381 smallholder farmers in the area, most cultivating variety 74158 on small plots. These producers have built a reputation for precise cherry selection, harvesting only fully ripe red cherries.
