Yabukita cultivar was developed in Japan in the 1950s, Yabukita is the most widely planted and popular tea cultivar in Japan, representing around 70-80% of all green tea grown in the country.
Yabukita produces a well-balanced, slightly sweet, and grassy matcha with a mild astringency. It has a smooth, subtle umami flavor with a clean, vegetal taste.
Yabukita is resilient and adaptable, making it a favorite among farmers for its high yield and consistent quality. It is shade-grown in many matcha-producing regions, contributing to its vibrant green color and rich flavor.
The Saemidori cultivar is a hybrid cultivar that combines characteristics of Yabukita and the Asatsuyu cultivar, introduced in the 1980s.
Known for its sweet, floral notes, Saemidori matcha tends to be smooth and creamy, with a rich umami flavor and low bitterness. It’s often described as having a light, floral fragrance with a slight sweetness that lingers.
Saemidori is particularly favored for high-quality ceremonial matcha due to its smooth texture and delicate flavor. It is a slow-growing cultivar, making it more labor-intensive but rewarding in terms of quality.
In addition to being a Yabukita and Saemidori cultivar from Kagoshima, Onyx Matcha is Shade-Grown and Stone-Milled.
Shade-growing refers to the practice of covering tea plants for a portion of their growing cycle to enhance the quality of the matcha. This process is typically carried out for about 2-4 weeks before harvesting, and it significantly impacts the flavor profile and nutritional content of the tea.
Once the tea leaves are harvested, they must be processed to create the fine powder that makes matcha. Traditional matcha is stone-milled to preserve the integrity of the leaf and produce the desired fine, smooth texture.
Stone milling ensures the best flavor is maintained, as the leaves are ground gently and evenly. The process creates a soft powder that retains all of the nutrients and flavors from the leaves, resulting in a rich, complex taste.
Together, shade-growing and stone-milling create a matcha that is complex, smooth, and rich in flavor. The combination of increased chlorophyll, amino acids, and careful milling results in matcha that’s both delicious and nutritious.

Chicory Fibre

Ingredients:
- 2 Cups All Purpose Flour
- 1/4 Cup Onyx Matcha Latte Powder
- 3/4 Cup Unsalted Butter
- 1/4 tsp Salt
- 1 Cup Powdered Sugar
- 2 Egg Yolks
Instructions:
- Combine flour and Onyx Matcha Latte Powder together. Set aside.
- Beat room temp butter until softened
- Add in salt and powdered sugar and beat well until soft and light in color
- Add in egg yolks, mix until well combined
- Gradually add flour and matcha mix until just combined, do not over mix
- Form the dough out into a log and wrap tightly with plastic wrap
- Chill in the fridge for 1-4 hours
- When ready to bake, preheat oven to 350*F and remove cookie dough from fridge
- Slice shortbread log into 1/2 inch thick slices and lay out on cookie sheet
- Bake for 12-15 minutes until slightly golden brown
- Remove, cool, and enjoy!

Yields a 6oz Matcha Latte
Measure out 10g (2 Tsp) of Matcha Powder with 1oz of Hot Water. Mix Well. Add 5oz of cold milk.
- For a Hot Matcha Latte: Steam / froth / warm chai mixture together. Enjoy!
- For an Iced Matcha Latte: Mix well and pour over ice. Enjoy!
Once you're ready for the next thing, try adding other flavors like strawberry, raspberry, jasmine tea, pistachio, lemon to your Onyx Matcha Latte. Add a scoop of powder to your next cold foam creation or vanilla milkshake.
