Monarch

Monarch is our most intentionally designed blend, formulated to harmonize seamlessly with both traditional dairy and plant-based alternatives. Its unique blend features a naturally processed, sugar-dense coffee that intricately intertwines with fats, producing a decadent flavor profile accentuated by multiple layers of complex caramelization created during the roasting journey. Look for notes reminiscent of dark chocolate and the subtleties of lush, nearly winey berries that solidify why this blend reigns supreme.

Story

At its nucleus, Onyx has distinctly been industry-focused. From conception, we've defined ourselves as coffee makers for the coffee industry, expressing ourselves through quality, transparency, and innovation. While we love the growth and influence our brand has had domestically and internationally, our focus is unwavering on learning, listening, and trying new things in a collaborative effort to improve Specialty Coffee and our personal growth. In this spirit, we are excited to announce a new roasting project in collaboration with our friends at Manhattan Coffee Roasters in the Netherlands. For over a year, we have been working collaboratively on sourcing coffees, developing roasting profiles, fine-tuning QC protocols, and working through logistics to create a new one-of-a-kind roasting project that will allow us to offer Onyx coffees in the EU in a new way.

Manhattan will not just assist but also help lead us into integration as an EU roasting operation. This partnership will begin with a select number of wholesale customers, open up to the entire EU for new wholesale partnerships, and then expand into direct-to-consumer ordering at onyxcoffeelab.com. For our friends in the EU, that means faster shipping times, fresher roast dates, and increased potential for our Wholesale partnerships to reach new cafes without the import issues. By partnering with like-minded quality-based roasters, we can expand our reach and coffee-making knowledge to continue our long-standing journey to "never settle for good enough." The coffee industry need not always be laced with combativeness. While this model will have to prove itself with time, we are excited to drive forward and move toward unity within the industry to bring excellent coffee to more people worldwide.

MONARCH
Monarch is one of two blends we recreate year-round specifically designed for espresso. This is the darker roasted, more chocolatey counterpart to Geometry Blend. We wanted an espresso that intentionally worked with higher amounts of milk and would represent a more traditional style of espresso. Monarch is bold and defiant and tends to stand out in beverages of milk that have a volume of 12oz or more. When tasted as pure espresso or in large amounts of milk this coffee shows sugar caramelization in coffee roasting to the fullest. Roasting and human-made flavors in coffee are what Monarch represents. It’s a beautiful image of what traditional espresso truly is even when we are sourcing at a modern level. It’s higher in sweetness and developed in the roast to take fruit flavors to caramels, brown sugars, and chocolates. For this blend, we use a combination of seasonal natural processed coffee from Ethiopia and a washed coffee from Latin America to showcase sugar and complexity. When tasting find bittersweet dark chocolate, a mulled wine acidic sweetness, molasses, and a hint of dried berries on the finish. The coffee is extremely heavy and dense with a velvety-like mouthfeel.

BLEND APPROACH
Our approach to creating blends is a bit different at Onyx. Instead of choosing coffees from specific countries or regions that will, in theory, intertwine well to create complex & cohesive flavors like most, we start from the end and work our way back. This perspective means we choose to create a particular flavor profile first, deciding which acidities, sugars, and fats we want to accentuate for the coffee. Once a flavor profile has been set- in this case, dark chocolate, red wine, molasses, and orange peel for Monarch- we then start cupping blind through many coffees to find these specific attributes. The purpose is that once a flavor profile is created, we update the coffees that make up Monarch every 3-4 months. This allows us to have a year-round blend and flavor profile of high quality while retaining our commitment to seasonal coffees. This vigorous amount of cupping and blending takes a considerable amount of time, but we think it makes the difference and is a system we use for all our blends. Currently, this blend is Colombia La Ceja #1 by Familia Macias, and Ethiopia Shoondisha G1 Natural. Find more info about these coffees within the Transparency section below.

Feel excited that the coffee you are drinking is always in season, and therefore, it is cupping and tasting to its full potential. We will never compromise our commitment to high-quality coffees and blends, whether it’s a single origin release or a blend component. You will not find Onyx buying “blender” coffees to save cost or prolong a good coffee. We also always keep blends to three coffees or less and maintain ratios in the build. This way what you extract is the flavor profile we designed.Monarch is in the hopper at all our Labs and is our house espresso for beverages 12 ounces and larger. Used by many cafes as both an espresso and a more developed drip option.

Green Cost

The subject of paying for green coffee is inherently complicated. While the amount paid is very important, the payment terms and type of contract negotiated during the purchase are also paramount. Paying $5/lb of coffee can be a great price, but could be detrimental to a producer if the payment terms exceed that of their needs. Here we will dive into not only what was paid for the coffee, but how the coffee was purchased. There is a glossary of terms to be found below which will aid in your understanding of industry terms.

Farm Gate - This reflects what is paid to the producer of the coffee at the farm level. Oftentimes in terms of our relationship coffees, FOB is fairly close to the farm gate price, except for countries like Ethiopia and Kenya, when it is very difficult to trace back all the way to the producer.

FOB - Free on Board. This means that the seller is responsible for any overland fees that happen before the coffee is on board the ship. This is our most frequently listed green cost, as it is the most simple way to present what we pay a seller, but it does not reflect what the person growing the coffee was paid.

EXW- This most often reflects the 'spot' price that we paid for a coffee. All of the cost is paid by the importer, and more often than not the FOB price as well as the transport costs are unknown.
